These are, hands down, the easiest muffins ever, requiring no flour or butter (yes!) and just one bowl. They’re packed with healthy unsaturated fats and vitamin E, making them perfect recovery treats between workouts. Made with ground almonds and coconut milk they are higher in protein and lower in sugar than ordinary muffins.
Makes 9 muffins
200g ground almonds
pinch of salt
1 tsp baking powder
200ml tinned coconut milk
2 eggs
60ml honey or sugar (you can add more or less according to taste)
Preheat oven to 200C/fan 180C/gas mark 6. Line 12 muffin tins with paper cases.
Place all the ingredients in a large mixing bowl or food mixer. Mix together until well combined, then pour the mixture into the paper cases. Bake for approx. 20 minutes until the muffins are risen and golden. Cool on a wire rack.
