Photo credit: http://www.adrianlawrencephotography.com/ Serves 1 50g (2oz) rolled oats A handful of fresh or frozen blueberries (defrosted) 300ml (10fl oz) any milk of your choice A pinch of cinnamon A few drops of vanilla extract (optional) Half a banana Drizzle of honey or maple syrup, to taste Put the oats and milk into a large pan and bring to the boil. Turn down the heat, add the blueberries and cook over a medium heat, stirring occasionally until the porridge thickens and the oats are cooked, about 4–5 minutes. The porridge will turn a dark shade of purple! Stir in the cinnamon and vanilla. Once you have the consistency you want (I prefer my porridge really thick!), pour the porridge into a bowl. Top with a few extra blueberries, the banana slices and a drizzle of honey or maple syrup.
