Overnight Oats with blueberries

Overnight Oats are essentially oats soaked overnight in yogurt or milk. The idea is that the oats absorb the liquid and soften, creating an instant breakfast (rather like cold porridge) that can be eaten straight from the fridge in the morning. You can make it in a bowl or, as is currently popular, in a wide-neck jar (or other food container) that you can pop in your kit bag or handbag and take with you to the gym or work in the morning! Make a batch – the mixture will keep in the fridge for up to two days and it makes a great pre- or post-workout snack. This is my favourite ingredient combination but feel free to substitute any other fruit or nuts.

Serves 1

40g (1½ oz) rolled oats

A pinch of cinnamon

75g (3fl oz) plain Greek yogurt

125ml (4fl oz) any milk of your choice

1 – 2 tsp maple syrup or honey (to taste)

A handful of blueberries

A few walnuts

  1. Mix together the oats, cinnamon, yogurt, milk maple syrup or honey and blueberries in a bowl or a glass jar. Cover and put in the fridge overnight so the oats absorb all the liquid.2. In the morning, remove from the fridge, top with the walnuts and enjoy!

Optional mix-in ingredients: peanut butter, protein powder, chopped apple, cinnamon or vanilla extract
